These are my side dish recipes that round out a meal without a lot of extra work. You’ll find vegetable-forward sides, simple grains, fresh salads, and comforting beans and potatoes that build on good seasoning, seasonal produce, and reliable pantry staples. Many of these recipes are flexible enough to serve alongside a quick weeknight dinner or as part of a more relaxed, family-style spread. Some of my favorites include what I think is the best way to cook sautéed oyster mushrooms (with garlic butter!) and creamy white beans with wilted greens and Parmesan.
