I don’t think of the Mediterranean way of eating as a diet in the restrictive sense — it’s an approach to thinking about food. Fresh vegetables, good olive oil, beans and whole grains aren’t supporting players. To me, they’re the main event!
These recipes draw on the flavors of Southern Europe and the Middle East: A Niçoise salad shared on a big platter. Garlic butter shrimp pasta that comes together in twenty minutes. A bulgur salad with tahini dressing that keeps in the fridge for days. A bowl of pasta with puttanesca made with pantry staples on a Tuesday night. This is the food I find myself returning to — vibrant, satisfying, and good for the soul.
