Sautéed spicy sweet corn side dish loaded with flavor. This super-quick recipe has fresh lime, Indian spices and green chili. Make this easy vegetarian side dish in 15 minutes.
1serrano or jalapeno chili pepperhalved lengthwise and finely chopped
1shallot or 2 trimmed scallionsfinely chopped
1poundfrozen sweet corn or 4 cups fresh sweet corn kernelsfrom 5 or 6 ears
Kosher salt
1tablespoonfresh lime juice
Freshly grated zest from 1 lime
1/4cupfresh chopped cilantro
Instructions
Heat oil in a sauté pan over medium-high heat. Add the mustard seeds and cover the pan. When the seeds start to sizzle and pop, toss in the cumin, turmeric, chili and shallot. Stir and cook 1 minute.
Add the corn to the pan with ½ teaspoon salt and stir.
Cover the pan and cook 5 minutes, then remove the lid and continue cooking until the corn starts to turn golden brown, a few minutes more.
Stir in lime juice, lime zest and cilantro.

Cheese is a fantastic addition to this recipe - try 1/4 cup of something soft and salty, such as crumbled feta or Mexican cotija.
