30-Minute Sweet Potato Black Bean Chili

A hearty sweet potato and black bean chili that’s packed with flavorful spices and veggies! This 30-minute vegetarian dish is an easy, nourishing one-dish meal. The recipe is perfect to make ahead and is freezer-friendly.

Ingredients

sweet potatoes

cumin

cilantro

avocado

yogurt

black beans

garlic

coriander

paprika

chipotle pepper in adobo

tomato paste

Slice the sweet potatoes into 1/2-inch planks, then dice into 1/2-inch cubes.

You should have 3 cups diced sweet potato.

Add spices, garlic and tomato paste to softened onions.

Cook for a minute to “bloom” the spices.

Add the sweet potatoes and vegetable stock or water just to cover.

Cook 15 minutes until soft, then stir in the black beans and heat 5 minutes.

Stir the black beans through the chili until they’re warm. Add the yogurt and sour cream, if using.

Serve the warm chili in bowls garnished the way you like!
