Instructions
Preheat oven to 425 (220C) degrees.
Slice each apple into 1/2-inch wedges — you should have a generous 4 cups.
Stir the butter, sugar, spices, salt and vanilla together in a bowl.
Toss the apples with the butter and transfer to a shallow baking dish.
Roast the apples about 20-25 minutes, until they soften and juices are caramelized and bubbling.
Let cool 5 minutes. Serve the apples warm over softly whipped cream on the side.
Notes
Roasted spiced apples are delicious served warm, topped with granola and plain yogurt, ice cream or over pancakes or waffles.
Choose one or a combination of apple varieties that stay firm for baking, such as Honeycrisp, Gala, Jonagold, or Braeburn.
