Make a classic chicken piccata with shallots and lemon butter sauce.  Have dinner on the table in about 30 minutes!

Ingredients

chicken broth

shallots

capers

parsley

lemon

chicken cutlets

butter

flour

Coat salt and pepper seasoned chicken breasts in flour...

Brown in olive oil until golden...

Deglaze with white wine, then cook shallots until softened.

Add chicken broth and garlic and simmer until reduced by half.

Add lemon juice, butter and chicken breasts and cook until done, basting with the sauce 2-3 minutes.

Sprinkle with capers and parsley. Enjoy!
