Elevate your dinner menu with this Italian herb risotto topped with sauteed shrimp and tomato butter sauce. 

Ingredients

Arborio rice

Red pepper

Shallot

Celery

Broth

Butter

Shell-on shrimp

Tomato paste

Make a shrimp broth with shells, vegetables, and water (or broth).  Keep warm.

Stir rice and shallot in olive oil...

Add warm shrimp broth, little by little, until the rice is al dente and creamy-textured about 15 minutes.

Saute shrimp with garlic, pepper and tomato paste...

Add some shrimp broth...

Top off the risotto with the shrimp and serve!
