Classic Pasta e Ceci Soup

This is a simple one-pot soup recipe for pasta e ceci, an Italian chickpea soup. It’s a hearty vegetarian chickpea soup made with dried pasta simmered in a rich tomato-based soup broth. Enjoy this easy to make, hearty soup that cooks in about 15 minutes!

Ingredients

garlic chili flakes

canned tomatoes

parsley

carrot

onion

chickpeas

olive oil

Parmesan

herbs

pasta

Soften the onions and carrot in olive oil in a large pot over medium heat.

Stir in herbs, chili and garlic until aromatic, about 30 seconds

Stir in the beans, tomatoes and pasta.

Pour in 3 cups of water (fill the can the tomatoes came in) and stir.

When the pasta is cooked (about 12 minutes) add the cheese and parsley.

Stir together, then serve warm.
