Whole Grain Pancakes with Roasted Pears

‘Tis the season to be jolly, right? To me, that means doing the rest of my holiday shopping on the internet (they deliver!), staying up past my bedtime with a glass of wine, and not getting up in the morning until I’ve read a chapter or two from my latest book. I wait until J finds his way next to my pillow, finally realizing he’s hungry for breakfast and nudging me out of the sack.

There’s no question that pancakes will be on the menu on holiday weekend mornings around here, so I dreamed up a few extra-special recipes.

  4. How do they compare with the Buttermilk Pancakes from your blog? Are they just as fluffy? I’m a little crazy for those Buttermilk Pancakes…but I will try if you say so.

  5. Stacy, these cakes don’t rise as high, but they do have a nice crunch from the cornmeal and are still very tender and tasty.
    You could make them when you want to feel virtuous. Or not!

    Wholesome pancakes sound really good. I think I prefer the taste of whole grain products, now.
    Do you ever buy Hodgson Mills products? I like them.

  7. J is my 6-year old son. He likes to make sure I don’t get too much sleeping time.

    I do like Hodgson Mills, also Bob’s Red Mill, which I can even find in some “regular” grocery stores as well as WF.
